This research project studies sustainable business models within the European agriculture sector, with a focus on the circular economy of the olive oil industry. The paper highlights the need to transform their businesses towards sustainability. It supports this transition by offering a sustainable business model for olive oil production to assist with murmuration. To construct the sustainability transformation of the olive industry, this project focuses its studies on business model canvas, the three pillars of sustainability, and valorization. The business model is introduced as a tool to help visualize the key activities combined with the concept of sustainability, yielding the sustainable business model canvas, which considers economics, society, and the environment. The valorization is featured in the economic pillars, offering to maximize the available resources. The sustainable business model canvas for the olive industry serves as a blueprint for farmers and other agricultural products. The model explores the core activities and their impact on sustainability and can serve farmers in achieving sustainability transformation goals. The project provides recommendations for Murmuration as part of the goal of exploring the business model to support the transition.en_US
